Granny Ray’s Kitchen

These recipes have been shared for generations and were compiled in 1982 in a family cook book in celebration of Granny Ray’s 80th birthday. There are still some who remember being in the kitchen with Granny and today her descendants still enjoy these recipes and are creating their own traditions and memories made with the love and wisdom from Granny’s Ray’s kitchen.

Corn Salad

2 cans whole grain corn; drained 1/2 cup minced green pepper 2 cups red cabbage; finely minced 1/2 cup diced onions 2 medium fresh tomatoes; diced Chop all vegetables the size of the corn. Mix all vegetables with 1/2 cup Miracle Whip. Chill for two hours.

Quick Hush Puppies

2 cups self-rising cornmeal 3 tbsp dried onion flakes 1 egg; well beaten ¾ cup milk Combine well. Let sit for a few minutes. Form into rolls or balls and fry in hot, hot deep fat until golden brown. Drain well. Serve very hot.

Hush Puppies

1 cup meal 1 cup boiling water Mix meal and water in a bowl and let set 30 minutes. Add: 1 cup flour ½ tsp salt 1 onion; grated 2 tbsp bacon; dripping 1 egg 2½ tsp baking powder Drop from teaspoon in hot oil. Dry fry until golden brown.

Parmesan Party Loaf

1 can biscuits 2 tbsp melted oleo ¼ cup Parmesan cheese Dip biscuits in oleo, roll completely in cheese. Arrange to overlap slightly in two rows on baking sheets. Bake 475° for 8-10 minutes.
