Whole green chilies
1 cup milk
½ tsp salt
¼ tsp pepper
½ cup fine cracker crumbs
4 eggs; beaten
2 tbsp flour
½ cup onion; chopped
1 can tomato sauce
1 lb cheddar or MontereycJack; grated

Remove skins, stems, and seeds from chilies cut lengthwise. Combine milk, salt, pepper, beaten eggs, and flour. Grease 9×13 casserole. Pour thin (very) milk mix in the bottom. Spread chilies flat over milk. Fill each with all cheese (reserve ¼ cup to mix with crumbs). Sprinkle onions over this. Stir milk vigorously and pour rest over everything. Sprinkle with crumb, cheese mixture. Dribble can of tomato sauce evenly over everything. Bake 350° for 30-45 minutes.
