1 cup sugar
4 tbsp cold water
Dash salt
2 egg whites; unbeaten
¼ tsp cream of tartar
½ tsp vanilla
Combine sugar, egg whites, water, cream of tartar, and salt in the upper part of the double boiler. Place over boiling water and beat constantly with an electric mixer until frosting stands in stiff peaks (7 minutes). Add vanilla after taking off the heat. Frost white cake and sprinkle coconut on top.
