1-quart green tomatoes; chopped
1 cup red sweet peppers; chopped
1 cup green peppers; chopped
1½ cups onions; chopped
2 cups brown sugar
5 cups cabbage; chopped
1 cup cucumbers; chopped
⅓ cup salt
⅓ cup vinegar
2 tbsp whole mixed pickling spice
Combine vegetable mixture with salt. Let set overnight. Drain and squeeze out all the liquid possible. In kettle: heat vinegar and sugar. Place spices in clean thin cloth and tie top tightly; add to vinegar and bring to boil. Add vegetables, bring to boil, and simmer 30 minutes or until liquid is low. Remove spice bag. Pack boiling relish in clean, hot jars.
