1 cup sugar
3 tbsp oleo
2 eggs; separated
1 cup milk
Juice & rind of 1 lemon
3 tbsp flour
Pinch of salt
1 10-inch pie shell

Beat egg whites stiff and set aside. Cream oleo, sugar, and flour. Stir in beaten egg yolks. Add lemon juice, rind, and milk slowly as you stir. Add lemon juice, add milk, fold in stiff egg whites. Pour in an unbaked pie shell. Bake 350° for 30-40 minutes until lightly brown and firm.
