¼ cup honey
¼ cups orange marmalade
½ tsp ground ginger
1 orange; peeled & sectioned
4 chicken breast halves; skinned
1 (8 oz) can pineapple chunks; drained
Combine the first three ingredients; stir well. Place chicken in a lightly greased 13x9x2 baking dish; brush with half of the marmalade mixture. Bake, uncovered at 350° for 50 minutes, basting occasionally with the remaining marmalade mixture. Spoon pineapple chunks and orange sections over chicken; bake additional 10 minutes. Yields 4 servings.
