Large eggplant; cut up the center

1 lb ground beef
1 large onion; diced
1 tomato; chopped
¼ cup cooked rice
Salt, pepper, garlic powder
Preheat oven 350°. Remove stem, put eggplant lengthwise. Remove skin. Brown meat, onion, and drain. Add tomato and spices. Stuff eggplant. Dot with butter in greased long baking dish. Bake 30 minutes.
