1 baked 9-inch pie shell
1 package (3 oz) cream cheese; softened
1-quart strawberries
1 cup sugar
3 tbsp cornstarch
Whipped cream
Spread cheese in the bottom of the pie shell. Choose the best half of washed, drained, and hulled strawberries. Spread whole berries over cheese. Mash remaining berries thoroughly to make thin pulp. Add enough water to this pulp and juice to make 1½ cups. Bring this mixture to boiling and gradually stir in sugar and cornstarch (which have been blended). Stir as it cooks until mixture boils, for 1 minute. Cool. Pour over berries in a pie shell. Chill about 2 hours. Just before serving, spread on sweetened whipped cream.
