1 lb beef; chuck or round trim off fat
¼ cup oil
1 cup onions; thinly sliced
1 cup green-peppers; sliced
1 tbsp cornstarch
¼ cup soy sauce
1 tsp garlic powder
Salt and pepper
1 cup red sweet peppers; sliced
2 stalks celery; thinly sliced
1 cup tomatoes with juice
Cut beef in strips or cubes. In a bowl put beef, soy sauce, garlic. Coat meat well and set aside. Prepare celery, onions, and peppers. Heat oil, add beef, and cook until brown. Add vegetables. Cook until tender. Mix cornstarch with the juice of tomatoes. Stir until thick in meat vegetable mixture. Add pepper and salt. Add tomatoes. Stir well. Reduce heat and simmer until meat is tender (10 minutes). Stir now and then (if too thick add extra tomato juice).
