1 cup flour
¼ tsp salt
½ cup evaporated milk
1 egg white; unbeaten
6 or 8 tbsp cold water
2 to 3 large onions; peeled and sliced ¼” thick
Sift flour and salt into a mixing bowl. Add milk, oil, and egg white and beat until smooth. Add water to make a medium-thin batter. Separate onion rings and dip each ring to cover with batter. Preheat deep fat to 375° and fry a few rings at a time until golden brown. Lift out and drain on paper towel. Salt to taste. Keep in a warm oven as additional rings are fried. Will stay crisp 15-20 minutes. Serves 4 to 5.
